1/2 l of miso soup
2 l of water
3 young onions with the green and the thin roots
a small bundle of parsley green with the stalks (cut them into smaller pieces)
a small bundle of celery stalks (cut those smaller swell)
2 carrots medium size
some vegetable oil
a little fresh oregano from tinos island
salt, pepper, tabasco, 2 cloves of garlic chopped for the finish
wash the greens and the carrots perfectly, especially the fine roots. cut everything but the onion roots in small pieces. boil the water, heat some oil in a separate pan and put the vegetables shortly inside. brown a little and fill into the pot with boiling water. add the miso soup.
after the addition of the very tasty bean soup from yesterday and a short boiling this was served to my friends michaela and walter from la cuisine brute – executive committee of the project "jahressuppe" who had to leave for the airport. they were in a hurry and I had got the information to cook shortly before and decided to make it as refreshment for them to carry their luggage. the rare done vegetables were o.k, the roots looked like noodles.
note that if you try to repeat the recipe exactly you need a miso soup that was made at least 1000 km away then transported via airplane and kept in a freezer for one week. i had the opportunity to take the second backup-soup which was taken from vienna in case of emergency (frozen in athens against failing luggage transport or problems with the passing on or cooking of the “jahressuppe” in greece)
further on i boiled the soup another 15 min to get something more like a vegetable fond for the addition to the soup of tomorrows event at domoi zois.
in the end i decided to add some chopped and browned garlic. this gave some more taste to the servings i eat alone. hope that ioanna, my kitchen host who came later enjoyed the rest and that anna who hosted me all the days that i lived in athens will eat the part of the soup brought to her apartment tomorrow…
