on the previous day you have to prepare a fish stock , made of fish heads and bones, bay leaf, rosemary, majoram, red peppercorns(in whole) and a pinch of salt.
sieve the stock, add sliced carrots and reboil for a few minutes.
the next day season the stock with garlic and add chopped tomatoes.
add filleted seabreams (fresh from the adriatic sea), allow them to steep for a few minutes, serve the soup with boiled rice and a good portion of finely chopped parsley.
