ingredients for 12 persons:
4tbsp butter
4 middle-sized onions, finely chopped
8 middle-sized tomatoes, chopped
1 chili
4tbsp flour
2l chicken stock
4 cups finely grated peanuts
3tbsp peanut butter
4 cups milk
salt, pepper, chili powder
Melt butter, roast onions and tomatoes first, then chili, stir in flour, sweat shortly, then slowely pour in the chicken stock while stirring continuously and bring the soup to the boil. Add peanuts, milk and peanut butter, reduce heat and simmer for 20 min. Season to taste with salt, pepper and a pinch of chili powder.
