ingredients:
2 large onions
4 cloves garlic
some fresh ginger
3 carrots
soya oil
0,5 litre water
0,5 litre coconut milk
salt, pepper, curry
about 0,5kg giblets
0,5kg chicken filet
mince peeled onions, also garlic cloves, grate ginger root finely and saute all that in soya oil. sprinkle curry powder over onions, ginger and garlic, remove the pan from the stove and allow to steep for a while.
bring water with the giblets to the boil to get a fine meaty chicken stock. season with salt and pepper, then strain the soup.
cut chicken filets into chunks
now cover the onion-curry-mix with chicken broth, add carrots and cook until tender. purree the soup finely add the meat chunks and cook until done.
finally add the coconut milk. here also comes the great entry of the day before soup !! bring the soup to a short boil, season to taste and enjoy.
