The 'Oa suppe' is a lenten soup and is the right dish after an opulent Christmas feast. My grandfather Samuel, owner of a restaurant, called it 'Hiadrecksuppn' (chicken smut soup).

recipe:
Make a roux of 1-2 tablespoons lard and flour;
when it's got a brown color, pour in 3-4 litres water;
add caraway and garlic and bring it to a short boil again;
finally, mix 2 raw eggs into the soup;
season with salt, pepper, lovage or stock cube.

Serve with stale bread.
