1kg carrots, finely cut
1 bunch of young onions, sliced
1 ginger root, finger-sized, peeled and finely grated
juice from 2 oranges
olive oil
1 cup of soured cream
lavender salt (sea salt and lavender pound in the kitchen mill)
pepper
2tbsp dijon mustard
250ml good white wine
Sweat young onions and carrots, pour in water, add all the other ingredients, simmer for 10 minutes and refine with white wine.
Serve topped with freshly grated parmesan,
