Ingredients:
Carrots – thinly chopped – lengthways
Red pepper – sliced into strips
Onion
Garlic
Clear honey
Grated ginger
Noodles/ small pasta
Sesame oil
Vegetable stock
Fresh lime
Method:
1. Roughly chop the onion, fry in a little sesame oil and then add the garlic.
2. Add the carrots and pepper
3. Add the ginger and honey, stir well and leave to simmer for a few minutes
4. At this point, add everything to the simmering stock.
5. Leave to simmer
6. Add the pasta or noodles ten minutes (give or take) before you want to serve.
7. Squeeze in a little fresh lime juice to finish.
