Place a small bunch of parsley, 1 large parsley root in a pot filled with 3 litres water (elements water and wood), add some juniper berries (element fire) and bring it to the boil ,
add 1 large piece of beef with 2 marrowbones plus 2 carrots, 3 pieces of a celery knob, 2 yellow carrots, 1 parsnip (element earth - therefore the CENTER OF THE SOUP), peppercorns and 1 leek (element metal). Let the soup simmer for 3 hours.
As you can recognize, it's a 5 elements soup according to the TCM dietetics (TCM = traditional chinese medicine)
The beef broth ( all the solid ingredients are removed now and kept for later) now is cooked for one and half an hour with 3 pieces of oxtail, and for another half an hour with 4 dried shitake mushrooms (soaked in water before), thereto some small pieces of ginger and a handful of wolfberries (fructus lycii).
What can this soup do for you? Strengthens the Qi and nourishes the blood of the liver. Perfect for people, who often stare at screens, where eyes get dry or start toflicker. Also helping against muscle tensions or cramps in the calf.
