Brown two onions in oliveoil, add the green parts of leek.
Simmer leek and onions in vegetable stock with carrots and potatoes, seasoned with origano, thyme (from mamas garden) salt and pepper. Important: the white part of leek is sauted separetely in salted butter with garlic. Very important: finally (families secret) a nutmeg is added....soups'cooking time, when boiled in a steamer 15min around, puree with a handblender and add the non-purreed white leek.....Bon appétit!
