12 tbsp. polenta meal(cornmeal)
3 leeks
125g butter
2 bunches of parsley
2,5l beef stock
125g cream
pumkin seed oil for drizzeling
salt, pepper, nutmeg
wash leeks well, cut it into slices and chop parsley
Melt half of butter in a pot and roast leeks very gently.
Add polenta meal, stir fry and infuse beef stock and cream.
Bring to a short boil, then let simmer on low heat for around
5 min. season with salt pepper and nutmeg.
Stir in the other half of cold butter using an eggwhisk.
serve the soup on deep dishes. sprinkle with parsley and drizzle over some pumpkin seed oil.
