At first I prepare a light roux, pour in some water and beat well by using an egg whisk; I add some stock, that I found in the ice box, left over from the last bollito misto and season with the classic potato soup spices, caraway, bayleaf, majoram; then I put in the cubed potatoes, cook them until tender and season to taste with salt and pepper.
