2-3 cooked boned and chopped chicken legs
2 onions
6 cloves garlic
5 cm ginger
5 gms coarse ground black pepper
40 gms butter
1 litre stock
200 ml white wine
Tin sweet corn
Salt to taste
1 tablespoon cornflour
Melt butter with pepper and sweat together crushed garlic, minced onion and sliced ginger. After about 15 minutes add chicken, stock, wine, sweet corn and season with salt. Boil for 10 minutes and leave to cool. Mix cornflour with some of the cooled liquid and add to pot heat gently until thickened and serve immediately.
