2 kg broccoli
2,5l vegetables fond (from celery, carrots, parsley, onion, leek, zest of a lemon)
1/8l crème fraiche
2 maces
fresh herbs: sage, oregano, basil
salt, black pepper
boil the vegetables for the fond and take them out when they are done. put the cleaned and cut broccoli stalks into the liquid and add the smaller broccoli after 5min boil all together another 10min. at the end add finely cut herbs.
mash the soup with crème fraiche and strain it.
serve with freshly ground black pepper.
