celery, carots, parsley-root, lovage and a 1kg.heavy piece of beef
roast all ingredients for a minute pour in 2,5l water, bring to simmer
for 1,5h. after sieving, the soup is ready.
as a garnish we had -tiroler speckknödel-(bacon dumplings):
1kg white bread cubes mixed with a bid of milk, salt and pepper and 5 eggs,
add 300g roasted, cubed bacon and 300g chopped -braunschweiger-
(cheap but tasty austrian sausage) and a lot of parsley. mix the ingredients
and knead until compact. form dumplings and put them into slightly boiling,
salty water for about 15min.
