½ kg lentils
2 lt water
2 medium carrots chopped
2 medium onions chopped
2 cups of chopped tomatoes
3 cloves garlic mashed
1 sprig rosemary
1 bay leaf
1 zest (1x4cm) of organically grown lemon
freshly ground black pepper
juice of 1-2 lemons
1/3 cup olive oil
1 cup of red wine
salt
We put all the ingredients, except for the lemon juice, olive oil, wine and salt, in a pot and cook for ½ hour. We pour the wine in and cook for 10 more minutes, or till the lentils are soft and the soup has acquired a thick consistency. We add salt and just before serving the olive oil and lemon juice (or vinegar) to taste.
If the lentils are organically grown,they are harder and they have to be cooked for 20 minutes, before adding the vegetables and the spices
