What soup?
Young stinging nettle, young dandelion, violets, sorrel, wasn´t hard
to find in our backyard and so the result was the Spring herbes soup.
Here is the recipe for 4 persons:
sweat one onion and three garlic cloves, finely chopped with oil or
butter,
add two tablespoons of oat flakes, roast slightly and then pour in
a sixteenth part of Weinviertler DAC (white wine), for oenophils it
can be more.
add 1-1,5l water, bring to the boil for 10 minutes.
then put in two handsful of rinsed and finely cut spring herbes (whatever
you can find: stinging nettle, dandelion, sorrel, ribwort, wood garlic,
yarrow, daisies, violets,...- but it also tastes with only nettles and dandelion, which you can find everywhere)
season with salt pepper, nutmeg, stock cube, reboil.
at last stir in some cream or milk (if it should be low calorie)
and serve
enjoy your meal!

Maybe you feel like coming to Pillichsdorf at Southern Weinviertel

dandelion, stinging nettles, daisies, ....one of the largest connected
wine cellar alleys of middle europe and the delicious Weinviertler DAC.
But also a good Zweigelt(typical Austrian wine), this can be confirmed
